Tandoori Soup Winner: Carol Haley!

Souptacular’s recipe contest judge, Jenni, tested the best contest entrants from our soup recipe contest.  She selected Carol Haley’s recipe, and provided these comments:

“This soup was very easy to put together.  The addition of the meat and veggies really made it a meal in itself. The ginger has so many great health benefits that it makes a great addition for both health and flavour.  The ginger gave it a lovely flavour that I might use a little more next time I make it! All in all, this recipe is a fabulous way to change up Souptacular’s Tandoori Hot Pot.”

With the festive season upon us, what better time to try a new recipe – with a few different elements for variety – to use up those leftovers!? We hope you like the winning recipe as much as we did!

Carol Haley’s recipe for ”Stretching the Chicken”

This recipe makes use of the carcass left over from a roast chicken or turkey and allows you to “stretch the chicken” into one more meal!

Ingredients:

  • Souptacular Tandoori Soup
  • coconut milk
  • Roast chicken or turkey carcass
  • chopped veggies (use fresh or leftovers)
  • 2 tsp grated ginger
  • 1/4 c. chopped parsley
  • 1/4 c. chopped fresh basil
  • 1 can (400 ml) of coconut milk

Instructions:

Cover chicken/turkey bones with water and simmer on stove or in crockpot until remaining meat falls off the bones.  Remove meat from bones and discard bones.  Add Souptacular Tandoori Soup and simmer for 2 hours on stove. During the last 20 minutes, add chopped veggies (great way to use up leftovers), and simmer until tender.  Add ginger, parsley, basil (or 2 tsp dried basil) and coconut milk (use regular or light).  Season to taste and enjoy!

Save-On Foods hosts its Grand Opening at 60 Broadway Boulevard, Sherwood Park, on Wednesday, November 16th. Souptacular products will be there!

To all our ‘Soup-er’ Sherwood Park and area customers: this will save you the trip to Old Strathcona Market on those snowy days!
