Basic Instructions (these tips apply to all the soups below):

  • Use stock in place of some or all of the water. Leftover meat drippings also add flavour.
  • Add veggies: chopped onion, leeks, tomato, peppers, spinach, shredded cabbage, salsa, tomato sauce

1.  Great additions to Autumn Harvest

  • finely chopped cabbage rolls
  • 1 cup of chunked-up turkey
  • 1/2 cup of salsa 1/2 cup of sauerkraut

2.  Great additions to Pasta and Grains

  • 1 cup turkey pieces
  • 1 carrot
  • 1-2 stalks of celery

3.  Green Split Pea Method

  • include the ham bone if you have one
  • Souptacular’s split pea soup
  • 8 cups of water

Cook on high for 6 hours then remove the bone and whisk the soup well so it goes into a smooth texture. Then add:

  • 2-3 diced potatoes
  • 3 diced carrots
  • 1 cup of diced leftover ham

Continue cooking for the remaining 2 hours. Deliciously easy.

Soup When You’re Sick

Liz, our web person, was struck with tonsillitis this winter, along with the rest of her family.  Here are some thoughts on how Souptacular can come to the rescue when you are under the weather:

When I got sick, I had no energy at all, and since my throat was so painful, I could hardly swallow, and I lost my appetite.  I realized that a big part of getting through this kind of illness is maintaining your food intake – and keeping it as healthy, yet digestible, as possible.  I skipped all the steps, cut open a bag of Souptacular, and started a basic recipe in the crock-pot, adding only a little dab of chicken stock paste and a little extra water.  This took me about two minutes, with no clean-up, so I was able to get a large pot of soup going and then collapse back into bed.

Since I hadn’t been eating for a day or so, when I started sipping the soup, I immediately noticed that my body wanted to eat it:  it went down easily, didn’t hurt my sensitive stomach, and comforted me right away. Most importantly, the soup was easy to sip and swallow, so I didn’t have the nauseous response to pain, and felt encouraged to eat more soup at the next meal time.  In other words, this soup helped me prevent that cycle of pain, hunger and nausea that often makes illness feel much worse than it has to!

When I started to recover more and was able to eat more normal foods, I decided to have a small bowl of rice for lunch.  I had a flash of inspiration that Souptacular soups would be great poured liberally over a bowl of rice – it was the kind of idea that occurs to you as though your body were telling you what it needed most.  I poured a ladle of soup over the rice, made sure it was warm through, and ate it with a fork and some pita bread.  I highly recommend this combination as a simple, filling alternative to a bowl of Souptacular soup, since it tastes great, it will travel well, and it’s easy to digest, especially if you have sensitivity from illness or any other reason.

If I could make any recommendation to someone suffering from a particularly bad cold, strep throat, or tonsillitis, it would be to have some Souptacular in your pantry, or order some for delivery online, and make it using the basic recipe right away.  You’ll have a great nutritional resource – a big pot of comforting and healthy soup – supporting your recovery.

Jenni’s 7 Days of Soup

Jenni is one of the main staff at Souptacular. You can often see her on Saturdays at the Souptacular stall at the Strathcona Market. She has a great idea for using a whole crock pot of Souptacular soup to serve an individual healthy, convenient, and interesting lunches for a whole week. We think you’ll love her suggestions!

As a person who gets bored easily, I wanted to find a way to eat Souptacular every day for my lunch and to keep it from becoming boring. I started out by making Peas and Barley soup using homemade chicken stock and adding 1 cup each diced carrot, onion and celery root. When it was made I divided the soup into 7 microwave safe containers ready for my busy week. Each day I could pull one out for lunch, and before heating, I could add an extra ingredient which would change it into a new lunch every day.
Here’s how my week went…..

Monday:

  • add half a cup of corn (fresh or frozen)

Tuesday:

  • add half a cup of diced cooked chicken

Wednesday:

  • top with grated cheese (I prefer smoked cheddar or Gouda with cumin but anything goes)

Thursday:

  • add half a cup of mushrooms fried in garlic

Friday:

  • add caramelized red onions

Saturday:

  • add half a cup of diced farmers sausage

Sunday:

  • add quarter cup of salsa

This is also a great way of using up leftovers from suppers made during the week. I would love to get some more ideas and am hoping to challenge all my fellow Souptacular fans to come up with new and interesting ways to change up your soups.
